Rosemary Apricot Glazed Pork Tenderloin


I love when my experiments in the kitchen turn out!  I made this great pork tenderloin last night.  It was so tender and juicy and had great flavor.  Here is the recipe.

Preheat oven to 350.  Place1 large pork tenderloin in a roasting pan.  Cover it with about tbsp olive oil.  Sprinke it with a generous amount of rosemary, salt and pepper all over.  Mix together 1/4 cup dijon mustard and 1/2 cup warmed apricot preserves and pour over the tenderloin.  Flip the meat over a few times to make sure it is coated evenly.  Cook in oven, uncovered, for 1 hour.  Place on cutting board and slice.  Serve with extra sauce from the pan on top.
