A good friend of mine is pregnant and due in just 13 days! This is her second baby and I have the feeling that people don't bring as many meals when it is your second. So I wanted to make some things to stock her freezer. One of the recipes I dropped off was homemade meatballs. I like to make them and then pop then in the freezer in a ziploc bag. Then you can just pull out what you need.
Here is my recipe:
2 lbs ground turkey
1 tbs allspice
1 tbs nutmeg
4 eggs
2 tsp salt
2 tsp pepper
2 garlic cloves, minced
1/2 cup onion, finely chopped
1 tbs tarragon
dash of cumin
Combine all of the ingredients and form them into balls using two spoons dipped in water. Arrange on a baking sheet and place in freezer. Once frozen, store in a ziploc bag.
To cook, place on cookie sheet and bake until golden brown, about 30-40 minutes at 350.
